Cajun Sensation Cauliflower Soup

Tasty and healthy, this creamy soup is sure to be a crowd pleaser. Our delicious “CAJUN SENSATION” spice blend adds a nice touch of heat along with other amazing flavors. You can roast the cauliflower before adding to the soup for added flavor.
2 Tb. olive oil
2 shallots, chopped
1 yellow onion, chopped
sea salt to taste
1 large russet potato, peeled and chopped into small pieces
2 garlic cloves, chopped
4 cups chicken or vegetable broth
1 small head of cauliflower, cut into small florets
2/3 cups aged white cheddar cheese, plus more for topping
1 cup coconut milk
Heat olive oil in a large stock pan over medium-high heat. Stir in shallots and onions with a good pinch of sea salt. Saute’ until onions are softened, 4-5 minutes. Stir in potato, cover, and cook for about 4-6 minutes, just long enough for the potatoes to softened up a bit.
Uncover, add garlic and CAJUN SENSATION and stir. Add broth and bring to a boil. Simmer until potatoes are tender.
Stir in cauliflower. You may need to add more broth to be sure the cauliflower is covered or floating in broth. Cook, covered, for 10 minutes or longer, until cauliflower is incredibly tender throughout.
Remove from heat and carefully puree soup with a blender (in small batches) or with a hand immersion blender. Return soup to original pot and stir in coconut milk and cheese. Add salt, pepper and CAJUN SENSATION to taste.
Serve with a drizzle of olive oil and topped with additional cheese and croutons.
